Valentina Pisani's 2021 restoration knit a 14th-century Dominican convent wing to the 1896 Liberty-style grand hotel — 111 keys behind original convent relics and James Robertson's art curation, with Marco Bay landscape and Rosaria Catania leading the restoration. Massimo Mantarro's one-Michelin-star Principe Cerami runs the Sicilian tasting menu; the 21-metre infinity pool faces the Ionian Sea with Mount Etna in the frame. Used as the principal location for HBO's second White Lotus season.
